Ingredients:

  • 1/3 cup diced celery
  • 1/4 cup finely chopped green onion
  • 1/4 cup reduced-fat mayonnaise
  • 3 tablespoons chopped fresh parsley
  • 2 tablespoons plain nonfat yogurt
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon pepper
  • 1 (2-ounce) jar diced pimento
  • 1 3/4 cups chopped cooked chicken breast (about 3/4 pound)

Directions:

  1. Combine the first 10 ingredients in a bowl and stir well
  2. Stir in chicken; cover and chill.

Recipe makes 4 servings.

Nutrition Information Per Serving: 80 Calories, 2.8 g Fat, 10.4 g Protein, 2.8 g Carbohydrate, 0.4 g Fiber, 260 mg Sodium.
